I recently discovered socca. It is basically a pancake made with chickpea flour. I was never one for pancakes. They were too sweet and too dense. Mom my always made banana pancakes and at the time I wasn't allergic to them but I just knew didn't really like it. I am still not a fan of pancakes but I will eat them every now and them. Then I made a socca pancake and ate it and now I can't stop thinking about it.
Socca Pancake
1/4 cup chickpea flour
1/4 cup water or nut milk
1 egg or 1/2 tablespoon of olive oil plus a extra for the pan
The recipe is simple and versatile as fuck! Mix equal parts chickpea flour and water or if you like, a nut milk of choice. Let it rest for 15-30 minutes so the flour can absorb the liquid. At this point make your toppings. I made dino kale and carrot top hash with garlic, chili flake, and bacon. Topped with nuts, greek yogurt and Everything But the Bagel Mix from Trader Joe's. For this version I added an egg but I have read versions that use olive oil. Pick your poison. I also added ground turmeric, paprika, and ground coriander to the mix. But you can add whatever you want. In pan over a medium high heat, preferably larger than 10 inches, and preferably nonstick, pour in some olive oil. When hot, pour in batter. Now you can do all of it at once or in batches. Cook until a golden brown, flip. Then on to the plate. Top with goodies. Consume.
